Funky Indian with a Mexican Twist to Celebrate 1 Year Anniversary

Namaste, hola, g’day! In May, IndiMex Café Bar Restaurant will celebrate its first birthday at Stones Corner Village! Over the past months, countless customers have practically conga-lined over the threshold and into a world of intriguing, high flavour cuisine. Owner/Chef GJ Singh refers to it as: “Funky Indian with a Mexican twist!”

Yes, they’ve seen the quizzical looks on faces. But consider this … the Indian and Mexican palates are made up of many of the same ingredients, and they work brilliantly together, especially since Chef GJ has spent years elbow-deep in both cuisines. Think Mexican burritos but stuffed with succulent chunks of prime meat cuts infused with Indian flavours. Smothered in chipotle sauce and cheese, it’s grilled to gooey, melty perfection. Every plate is a fiesta of elements including fresh, house-made guacamole (the best in Brisbane!), Biryani rice, frijole negro (black lentils), refreshing salsa and sour cream. Don’t miss the Enchiladas, Nachos and Chimichangas! Open 7 days a week for lunch and dinner.

Trust us when we say that IndiMex’s dishes have to be tasted to be believed. Dare to explore the menu and you’ll be very grateful. But if you need a little arm-twisting, we suggest you tuck into Chef’s authentic curries which range from mild to super-hot. Once you’re sold on the Indian favourites, you’ll not find it much of a leap to the innovative IndiMex specialities. The restaurant’s regulars are ‘the new faithful’, returning time and again for another ‘hit’.

Brilliantly, IndiMex is open to welcome customers from 8am Wednesday to Sunday for traditional as well as funky breakfast options. Try the Bombay Benedict Brekkie, the familiar classic but with an Indian-inspired twist. It’s a revelation featuring crispy buttered sourdough toast loaded with chicken tikka slices, poached eggs and curried hollandaise sauce and served with frijole negro.

IndiMex also offers scrumptious lunches from wraps and steak sandwiches through to soups, salads and of course, curries and the in-house specialities … Burritos, Nachos, Enchiladas and Chimichangas.

For dinner, you can also enjoy a mouth-watering steak, a fabulous Moreton Bay Bugs dish served with a delectable, cream-based sauce or a sizzling Chicken or Steak Fajita which, when transported to your table, leaves a trail of fragrant steam wafting behind the server.
